I made a reservation at this restaurant a month ago. When I arrived, the seats were completely booked, and it felt like everyone started at the same time. A Golden Retriever (whose name I forgot) greeted us at the entrance, lying down and refusing to move, which was incredibly adorable.I ordered the Margherita DOC as part of a lunch set that came with drinks and salad. While waiting, I watched the chef prepare the pizza. The craftsmanship was impressive, and the aroma of baking filled the air. I was getting hungry.Then the Margherita arrived. This pizza, inspired by the Italian flag, was shining beautifully... If it were the Japanese flag, would it be pickled plums and white rice? Just kidding! Well, that’s delicious too! From its appearance alone, I was certain it would taste amazing.Taking a bite, I was greeted by the sweetness of the tomatoes, which spread like honey, accompanied by a refreshing sweetness and just the right amount of acidity. The cheese was rich yet refreshing, and the basil was the best I’ve ever tasted (do I even remember how many basils I've had?). It felt like the ingredients were in their prime, perfectly placed on this dough. It was too delicious. The crust, baked in the oven, had a delightful bitterness and a toasty wheat aroma that was exquisite.I would love to come back when I visit Sendai again. Next time, I want to pet the dog (the owner mentioned that the dog loves attention, but it was sleeping when I left, so I had to give up. It was really cute...)
