I visited Kyodai Zushi alone during my trip to Niigata over the Obon holiday. I made a reservation for 8 PM and arrived just in time, where a female staff member was waiting for me at the entrance. The seating was at the counter with about eight seats, and I sat right in front of the head chef. The chef looked young, and the apprentice staff were also quite young, greeting each other with a respectful "Excuse me" every time they entered the kitchen, which gave off a spirited atmosphere. I watched their beautiful and meticulous cooking techniques throughout my visit. All the ingredients served, except for the sea urchin, were sourced from Niigata Prefecture, and everything was delicious. I was surprised to see that the nori (seaweed) was from Aichi Prefecture's Mikawa Bay, while the thick rolls were made with ingredients from Ariake. I learned that Niigata's thick rolls contain walnuts, which was a first for me. I opted for the omakase and only ordered tea, totaling exactly JPY 25,000. I believe the same quality in Tokyo would easily cost over JPY 50,000. If you're looking to enjoy sushi in Niigata City, I highly recommend this place.
