On this day, I finally got to visit my beloved Japanese Cuisine Fuji, a day I had been eagerly anticipating. Looking back at my past reviews, I could hardly contain my excitement for this day. (^^)Despite the rough weather, I am deeply grateful to the fishermen who went out to sea before the storm and to Mr. Maeda, who tirelessly gathered the fish.Their efforts were shared on Instagram, and I feel immense gratitude for being able to enjoy such wonderful fish even at a time like this.■ Marinated Sardines■ Steamed Clams■ Grilled Wheat Squid with Kujo Green Onion and Soy Sauce Koji■ Horse Mackerel Soup■ Sashimi (Mejika Tuna and Ebo Sea Bream)■ Grilled Sweetfish■ White Bean Salad with Peach■ Grilled Eel■ Seared Red Sea Bream with Vinegar■ Steamed Red Snapper with Folded Eggplant■ Meal - Simmered Rice - Marinated Horse Mackerel Rice with Soft Roe - Mixed Rice with Jindo Squid and Butterbur - Fish Broth Zosui (Rice Soup) of the Day■ Warabi MochiI believe I have tried almost all of Fuji's specialties, but the one dish I had yet to try was the eel.Finally, I got to experience it! And it was "Deshiko!"While most eels are male, the females are known for their rich fat content. The brand eel from Lake Hamana, raised with a special feed blend to promote female growth, is called "Deshiko."They say it is cooked in a way that contrasts the usual crispy skin and fluffy flesh, resulting in a wonderful balance of tenderness and concentrated flavor!Mission accomplished with joy! (^^)I truly appreciate the new discoveries and delights that Fuji consistently offers.As for the wine, I chose the bottle myself, so it's 100% my responsibility. (^^)The lingering acidity was quite pronounced for a Chenin Blanc, perhaps a bit too strong. I imagined how well it would pair with a more mineral yet subtle Vermentino or a quality Trebbiano, or even a Sauvignon Blanc from Northern Italy... enjoying wine is all about such daydreams.
