I visited the renowned Ginza restaurant "Shinohara." From the moment I sat at the counter, I felt that this place was not just about dining, but a stage to savor the seasons.What first caught my attention was the impressive king crab that appeared right in front of me. It heightened my anticipation for the meal to come, and I couldn't help but be captivated by its presence.The first dish was a vibrant plate featuring sea urchin and caviar. Not only was it visually stunning, but the harmony of the ingredients captured my heart from the very first bite.The tempura of abalone was remarkable for its tenderness and umami, while the dashi-infused soup had a comforting flavor that gently enveloped my body. The conger eel was paired with aromatic spices, creating a dish that highlighted the natural flavors of the ingredients while adding an unexpected twist.The seasonal decorations, including hydrangeas, bamboo, and other elements, were exquisite, beautifully expressing early summer throughout the entire space, not just in the dishes. The hassun was reminiscent of a Japanese garden, allowing me to enjoy a variety of distinct flavors.And finally, the king crab to conclude the meal. Its overwhelming presence added a powerful resonance to the entire course, seamlessly integrating into the delicate flow of the kaiseki.The quality of the dishes was exceptional, and I was also impressed by the meticulous work of the young chefs and the lively atmosphere. I believe this is one of Ginza's representative Japanese restaurants that I will want to visit again with each changing season.
