The omakase course, which starts with a simultaneous serving, carries on the culinary tradition of the renowned Osaka restaurant "Torisho Ishii," offering not only yakitori but also seasonal dishes.On this day, I enjoyed juicy chicken wings, perfectly grilled skewers, and a light, crispy dish, all showcasing exquisite cooking techniques. The crispy skin and the rich flavor of the chicken that unfolds with each bite were truly impressive.For pairing, I started with craft beer and then savored a variety of unique Japanese sakes, including "Jozan" and "Ugo no Tsuki." The changing flavors of each skewer paired beautifully with the sake, enhancing the appeal of the dishes.To finish, I had refreshing somen noodles infused with sudachi citrus. It was a light conclusion that left no heaviness, allowing me to enjoy the lingering flavors until the end.This course was not just about serving grilled chicken; it was a thoughtfully calculated experience that included cooking techniques, flow, and pairings.
