I finally visited the reservation-only restaurant "Ooishi" in Ginza, which I had been longing to try.As I admired the seasonal ingredients displayed at the counter, such as giant celery root, rock oysters, and watermelon, my anticipation grew before the course began. Chef Ooishi's dishes masterfully incorporate Japanese ingredients and seasonal flavors into a French base, delivering surprises and delights with each plate. It's easy to understand why this place is known for being hard to book and has received high praise at the Tabelog Awards. What stood out the most were the generous servings of caviar, the rich lobster bisque, the oysters served in their shells as a gratin, the playful frog-themed appetizer, and the perfectly cooked meat dishes wrapped in pastry. Each dish not only had a striking presentation but also an exceptional level of flavor, keeping the excitement alive until the very end.The wine pairing was also remarkable, featuring selections from Champagne to Koshu and Burgundy that complemented the dishes beautifully. The synergy between the food and wine enhanced the appeal of each.Above all, Chef Ooishi's cheerful personality and the lively atmosphere at the counter added to the unique charm of this restaurant. It was not just delicious; it was an entertaining French experience that made me genuinely want to return.I truly felt the reasons behind the difficulty in making reservations through the quality of the food, service, and ambiance. This is a place I would love to revisit on a special occasion.
