In respect to the renowned chef Minoru Sano, the noodles are cooked to a perfect tenderness and have a pleasant texture. They pair well with the light broth.⭐︎Broth The broth has a rich animal base with a hint of shellfish flavor. The seasoning strikes a good balance between the umami and sweetness of white soy sauce. You can feel a gentle yet robust flavor.Each ingredient is prepared with great care. The chashu (braised pork) allows you to enjoy various cuts. The only downside was the wonton, which was a bit too firm for my taste. Nevertheless, I am truly impressed by the skill that elevates ramen to such heights.
