The pinnacle of Spanish cuisine. Starting with a paella featuring red sea urchin and squid ink, it kicks off with a strong start. The second dish is a bocadillo with small horse mackerel, a dish I've seen in photos many times but finally got to try. It's marinated with a different type of vinegar than what you’d find in sushi, pairing perfectly with shiso leaves. Then came the ajo blanco, followed by horse and beef dishes, each one was a full-on flavor experience!
