On a night in July 2026,I stopped by Yaizu during a business trip, with the destination being Onjaku.While it was mostly a work-related visit, I’ve found myself adjusting my work schedule to fit Onjaku’s reservations rather than the other way around.It was a scorching summer day, but by evening, the sea breeze was refreshing. I walked about 20 minutes from the station to the restaurant as usual.That evening, I thoroughly enjoyed the flavors of Suruga Bay. I had a lively conversation with the owner about the meaning of "shitate" (preparation) related to their connection with Sasuemaeda Fish Shop, making for an engaging two and a half hours.I had only experienced the horse mackerel grilled with salt before, but that night, it was served as shabu-shabu.
