This time, I visited the renowned Narayamachi Ao, a place that every food lover in Fukuoka knows! However, it’s not easy to get a reservation here, as I’ve heard it can take years! Fortunately, I had the chance to go, and I was beyond thrilled! This time, instead of the usual "Ao," I experienced "Ura Ao," where the owner’s apprentice takes charge of the cooking.Tucked away in a quiet alley of Narayamachi, the restaurant has a special ambiance even before you step inside.Once I started tasting the dishes, I thought, "So this is what innovative cuisine is all about!"The first dish was a signature item at Ao, a strikingly black mound that made a strong visual impact! If I remember correctly, it was a bun made with ingredients like pig's trotters and foie gras.And it was incredibly delicious! The appearance didn’t hint at the flavor, but once I took a bite, it was packed with umami, offering a taste I had never experienced before. I could have eaten several of them!From there, I was continuously surprised by the variety of ingredients, cooking methods, and combinations.It seems that this "Ura Ao" has a Western cuisine theme, and familiar dishes like gratin and hamburg steak were presented in completely new ways.It was enjoyable to look at and absolutely delicious to eat. I found myself nodding in agreement, thinking, "Ah, so this is what innovative cuisine means."Not only were the dishes unique, but each one was genuinely tasty, keeping my excitement high throughout the meal! Truly!After experiencing Ura Ao, I couldn’t help but think, "I want to try the real Ao next!"If I have the chance again, I would love to visit this restaurant.
