It's been a full two years since my last visit. During that time, I've tried a considerable number of ramen dishes, so I was really looking forward to seeing how I would feel about the flavors here again. Since the restaurant has recently reopened, I made a reservation for the first time slot of the day. Although it's said to be a difficult place to book, if you follow the system properly, you can easily secure a spot. It's not as challenging as it seems.I arrived a few minutes early and gathered in front of the restaurant. It appears that seating and ramen serving are done on a first-come, first-served basis within the same reservation slot. I chose the Special Soy Sauce Ramen, and it arrived about 17 minutes after the opening. With high expectations, I took my first sip of the broth. The first thing that came to mind was the saltiness. It felt like the deep, layered umami that had once impressed me was somehow missing. The noodles were as soft as I remembered. However, despite the "special" label, I didn't feel that the volume or variety of toppings offered anything particularly extraordinary or value for money. On this occasion, I happened to not be very hungry, so the portion size was just right, but objectively speaking, I felt a bit disappointed regarding the cost-performance ratio. Additionally, the pepper that used to be available on the table was no longer there, and when I asked, I was unable to get any. I couldn't change the flavor profile, so I continued eating as is.When weighing the price of the bowl against the actual quality and satisfaction, I must admit I left feeling somewhat disheartened this time. Perhaps my palate has become more refined over the past two years, or maybe the quality of the broth has changed over time. Given how much I was once moved by this place, I left with mixed feelings.
