I managed to visit Sushi Saitou, a place that's notoriously hard to get a reservation at. I thought I might never get the chance, but luck was on my side this time.My spirits were instantly lifted! The movements of the apprentices were sharp and energetic, which was a delight for someone like me who appreciates a sports-like atmosphere. Of course, the master chef is the pinnacle of it all.The sushi, crafted with meticulous care, is not flashy but stays true to the fundamentals of traditional style. The thick toppings paired perfectly with the rice, filling my mouth with rich flavors that spread delightfully. As it was my first time, I expected to feel nervous, but it was surprisingly comfortable, and the experience flew by. In fact, I felt energized from start to finish, leaving me grateful for such exquisite sushi that made me think, "I can do this!" But I wonder when I’ll be able to go again… haha.
