The surprising cooking technique and the unique taste of rare chicken were incredible. I learned that chicken can also be aged. I tried the chicken back liver for the first time, and I was told that one skewer is made from the back liver of three chickens.Not only was the chicken impressive, but the selection of fresh Japanese sake was astonishing. As a fan of fresh sake, I wish every restaurant would offer such a wide variety.
