I finally had the long-awaited opportunity to visit the renowned "Kyodai Zushi," a Michelin two-star restaurant that has also received the "The Tabelog Award 2026 Silver."Unlike relying on seafood from Toyosu (formerly Tsukiji) sourced from all over the country, this restaurant firmly adheres to a "locally sourced" style that fully utilizes the rich blessings of Niigata. I was thoroughly satisfied from start to finish with the high level of quality.What particularly impressed me that day was the magnificent abalone. It was astonishingly tender and cooked to perfection, releasing deep umami and aroma with every bite, which brought a smile to my face.The sushi featured seasonal seafood caught in the nearby waters of Niigata, showcasing the freshness and robust flavors unique to local ingredients, perfectly complemented by the carefully crafted rice. The grilled sweetfish and beautiful edamame, along with the appetizers and sushi, created a wonderful experience that allowed me to savor the four seasons of Niigata through all my senses.Each piece of sushi, maximizing the charm of Niigata, offers a top-tier sushi experience worth traveling for.It was an exquisite evening that I definitely want to revisit in a different season.*Reservations can be made through omakase.
