Ginza Shinohara, a Japanese restaurant located just a 3-5 minute walk from Ginza Ichome Station, has been a top contender in Japanese cuisine since its expansion to Tokyo in 2016, consistently holding a Tabelog Gold rating. It has also been recognized as one of the top 100 Japanese restaurants in Tokyo from 2021 to 2025, and has been awarded Tabelog Gold from 2017 to 2026.Not only is the food exceptional, but the service is also top-notch, providing a luxurious dining experience in a wonderful atmosphere. Reservations can be quite challenging, but occasionally, they open up slots on the Omakase site, so with a bit of luck, you might secure a reservation for two.Here’s what I enjoyed during my visit:-----------------------------◾️ Edamame First, we had edamame served as a luxurious slush, using finely shaved ice as a bowl. The refreshing cold texture combined with the acidity of the tomato and the bitterness of the edamame was delightful.◾️ Sweet Shrimp The sweet shrimp topped with sea urchin from Yamaguchi Prefecture and shiso leaves. The overall flavor was light and easy to eat, thanks to the wasabi vinegar that brought everything together.◾️ Sweetfish A beautiful clear soup with sweetfish, boiled noodles, and winter melon. The gentle yet powerful umami of the broth permeated every bite, and the tender texture and sweetness of the sweetfish were simply exquisite!◾️ Pike Conger, Sea Bream, and Young Bluefin Tuna Sashimi featuring grilled young bluefin tuna, carefully prepared pike conger, and classic sea bream. The grilled bluefin had a crispy skin and a rich flavor, perfectly complemented by wasabi and other condiments.◾️ Sweetfish Sushi A rare presentation of sweetfish sushi. The sweetfish was grilled with ginger soy sauce to reduce bitterness, and the sushi rice was enhanced with pickled ginger, sesame, and shiso leaves, creating a refreshing and tangy sushi experience.◾️ Grilled Eel A delightful grilled eel sushi with a soft and fluffy texture. The flavor of the rice was distinct from the sweetfish, and the balance between the sweet eel and the rice was simply perfect.◾️ King Crab A large and impressive king crab available for an additional charge. It was delicious on its own, but even better when dipped in chili vinegar or olive oil.◾️ Seasonal Delicacies In celebration of Tanabata, the presentation was vibrant and beautiful, inspired by the history of Tanabata and the Milky Way. The dim lighting created a stunning atmosphere, reminiscent of candlelight.The dish included chilled hairy crab and scallops, sweet squid meatballs, fragrant grilled duck, eggplant simmered in broth, rich corn tofu, and deep-fried sweetfish with sour cream and caviar—all seasoned perfectly and absolutely delicious!◾️ Foie Gras A palate cleanser featuring foie gras, butter, and persimmon sandwiched in a monaka. Paired with a complementary sake, the sweetness of the foie gras and the richness of the butter were beautifully highlighted.◾️ Abalone Deep-fried abalone and corn, encased in a crispy and fragrant batter, concentrated the flavors of the ingredients. The rich sweetness of the corn and the unique texture and umami of the abalone were distinctly enjoyable.◾️ Soft-Shelled Turtle A hot pot dish featuring soft-shelled turtle, served as a steaming hot rice porridge. It simmered in the pot, allowing us to enjoy its warmth until the very end, providing a comforting and warming experience.◾️ Omi Beef Similar to the king crab, Omi beef tenderloin katsu is available for an additional charge. The tender texture and robust umami of the meat combined with the crispy coating, enhanced by the refreshing acidity of sudachi, made it a fantastic accompaniment to rice.◾️ Clay Pot Rice Clay pot rice with young ginger, served with a medley of pumpkin, shrimp, and octopus, along with simmered dishes and red miso soup as a closing dish.
