I registered for cancellation notifications through OMAKASE, and on the day of a cancellation, I was fortunate enough to secure a reservation.Sushi Namba is renowned for its meticulous temperature control of both the rice and the toppings, with each temperature listed on the menu. The appetizers and sushi were crafted with the finest ingredients and careful attention to detail. They were not overly extravagant, but rather deliciously highlighted the quality of the ingredients. The sushi, paired with perfectly controlled rice that melted in my mouth, was truly delightful.Chef Namba had a somewhat reserved demeanor, serving the dishes in a calm manner, yet the atmosphere was not overly formal. The sushi was classic, beautifully presented, and incredibly tasty, though it felt a bit too pristine at times.(Appetizers)- Junsai (water shield)- Tail meat of the Nital whale- Chestnut crab with hot sake- Simmered Kinki fish- Spear squid- Monkfish liver(Nigiri)- Tuna tempura roll- White squid- Grilled anago (sea eel)- True cod roe- Surf clam- Young sea bream- Bird shell- Horse mackerel- Bonito- Sardine- Isaki (grunt)- Steamed abalone- Abalone with sauce and sea urchin- Botan shrimp- Lean tuna- Fatty tuna- Kohada (shad)- Chutoro (medium fatty tuna)- Shako (mantis shrimp)- Tuna roll- Red miso soup- Tamago (sweet omelet)
