This was my third visit to Onjaku, and right from the start, I was delighted to find a specially designed menu in a soft yellow color placed at my seat.A female staff member remembered our previous conversation and recommended a Japanese sake that wasn’t on the regular menu, creating a special menu just for me (*´꒳`*). The sake, especially the Sake, was delicious, and I ended up ordering a second round after trying it all. ^ ^The dishes made with carefully selected local ingredients were once again outstanding, featuring items like Jindo squid and young horse mackerel.Among them, the grilled eel wrapped in a thin skin and the Ise lobster simmered in its shell left a lasting impression. The owner, Sugiyama, explained that the eel was wrapped with Daura burdock and kinome, reinterpreting the concept of Yawata-maki. ^_^As for the Ise lobster, it’s typically served with the shell, but here it was served without it, as the shell was used to create the flavorful broth.The owner not only reinterpreted traditional dishes to enhance their flavors but also made them easier to eat by wrapping them in skin or removing the shells beforehand.
