Sushi Namba in Hibiya is a renowned restaurant that every sushi lover should visit, although I had been wanting to go for a while without finding the opportunity. This time, I was invited by a friend for lunch. The location is inside Tokyo Midtown Hibiya, and everything started promptly at noon. Since I had been drinking until the morning, I unusually enjoyed my meal without alcohol this time. The simmered Kinki fish was so tender that it fell apart with chopsticks, offering a refined flavor. The minke whale was surprisingly soft, with a rich umami from the well-marbled fat that left a lasting impression. The monkfish liver melted in my mouth, bringing a smile to my face. The firmness of the vinegared rice was just to my liking. The menu, which indicated the temperatures of the fish and rice, was intriguing, and the skillful temperature management resulted in truly impressive sushi. Among the offerings, the horse mackerel and botan shrimp stood out as particularly memorable in taste. Each piece showcased a calculated harmony of temperature and texture, making it the ultimate sushi experience. I thoroughly enjoyed this luxurious time during lunch and left completely satisfied. It was a great meal!
