I visited Kyodai Zushi alone at 5 PM on a Friday. Until now, Niigata was just a stopover for me on my way to Hokkaido via ferry, but this time, I happened to find an available reservation for one on a day that matched my ferry schedule, so I decided to make a reservation and go.At the entrance, a female staff member welcomed me and guided me inside, where she handed me over to another staff member who showed me to my seat and pulled out the chair for me.The head chef and his apprentices greeted each customer warmly. The head chef is a handsome man who resembles the actor Kohei Matsushita. There are eight seats at the counter, and everything starts at once. Here’s what was on the menu today:◯ Fried Ginkgo Nuts ▶ Ichi Ban Shibori Nama ■ Sado's Arai ■ Chidai (Kasugo) ◯ Hamo ▶ Hakkaisan ■ Nanban Shrimp ■ Sado's Nodoguro ◯ Aosa Seaweed and Ume Chawanmushi ■ Kuruma Ebi ■ Awadachi ◯ Grilled Bai Shellfish ▶ Musou Shinkara ■ Maika ■ Murasaki Uni ◯ Grilled Hatahata ■ Maguro Akami ■ O-Toro Zuke ◯ Grilled Eggplant ◯ Pickled Daikon and Eggplant ■ Hairy Crab Roll ◯ Ara Soup ▶ Nigori Sake Sparkling SIRIUS ■ Futomaki ▶ Murakami City Black Tea Even the choice of nori is carefully matched to the ingredients. The order of the dishes has meaning, such as serving the Nodoguro after the Nanban shrimp, which makes you think about the food chain and why it tastes so good. The uni and O-Toro were, of course, top-notch, but the Hairy Crab roll and Futomaki in the latter half were so well done that I couldn't help but enjoy more sake. The person next to me seemed to be an old acquaintance of the head chef, and we had a great time chatting together. The level of hospitality was high, and the pricing, under JPY 30,000 even with a good amount of drinks, was very reasonable. Kyodai Zushi is truly a gem in Niigata. It was a great meal.
