I made a reservation through Table Check at 8 AM the day before.The slots filled up in just about 3 minutes. Seriously?It took me just under 10 minutes to walk from Hatsudai Station on the Shinjuku Line to the restaurant.I arrived a bit early and was invited in from inside the restaurant.Once inside, I purchased my ticket. (I had decided in advance since I thought I would be indecisive.)After sitting down, they confirmed my name.The interior features only counter seating, with a clean and modern Japanese aesthetic.Japanese-style remix music plays at a lively volume.▪️Special Soy Sauce Ramen - JPY 2,000First, the soup.Richness and umami hit me all at once.Honestly, it’s so delicious that I’m at a loss for words…I felt completely satisfied.The noodles are chewy with a perfect texture, just to my liking.They match the soup exquisitely.It’s like a work of art that remains delicious even in this age of abundance.Each topping is fantastic:- Three types of chashu (braised pork)—tender, seared, and roasted—each with its own unique character, transforming my experience with every bite.- Wontons… plump and packed with flavor.- Nori (seaweed)… deeply flavorful, standing up to the soup.- Menma (bamboo shoots)… finely sliced yet with a delightful crunch.- Green onions… refreshing without any spiciness, cleansing the palate.- Soft-boiled egg… has a refined creaminess that clings to the tongue.▪️Seared Chashu Rice - JPY 450A gentle saltiness with a toasty aroma from the searing.The green onions enhance the appetite without any spiciness.All I can say is, "Bravo!"Including the meal, reservation, and transportation, it came to JPY 3,000, but I was extremely satisfied.While it may not be considered budget-friendly, I would gladly skip ramen 10 times in my daily life just to eat here.The atmosphere is so well-crafted that it makes me think, "Is this what ramen is supposed to be?"—it feels almost absurd to compare.I wonder if it could even compete with slightly pricier yakiniku or small dining establishments.When I think about it that way, it actually feels reasonable.The hospitality and thoughtful gestures from the owner were also delightful.I hope other restaurants can learn from this as well.Next time, I want to try the white soy sauce, salt ramen, and tsukemen.It was a great meal.*Note: It seems the restroom is unavailable.
