The pickled water eggplant was truly impressive. You can choose between white truffle salt and black salt for seasoning, but I opted to pay extra to enjoy both. I personally prefer the truffle. For the main dish, I had a set of Himuro pork and special tenderloin. The Himuro pork melts in your mouth, and it pairs perfectly with the truffle salt. I also ordered crab cream croquettes and shrimp tempura.Everything was delicious, but what stands out at this restaurant is that all the sauces are fantastic. The tonkatsu sauce is undoubtedly the best I've ever had.Looking at the restaurant's page, I learned that the chef has a background in French cuisine, which makes perfect sense. I feel that many French chefs are geniuses when it comes to flavor combinations.
