The exterior is a stylish house nestled among vacation homes, and the interior features a main floor and private rooms with a beautiful garden view. Congratulations on winning the Gold award shortly after relocating! On this day, I enjoyed truly evolved fermented dishes made from Karuizawa vegetables, deconstructed and reconstructed in a remarkable way. The smoked salmon is a given, but the cutlet, pasta, cucumber somen, and spring rolls... I was amazed by the high level of completion in each dish. Pairing them enhances the flavors even more. These fermented dishes highlight the deliciousness of the vegetables in a way you can't find elsewhere. It's worth the trip to Karuizawa. A fantastic restaurant!
