This is a famous restaurant that is often fully booked.Thanks to a fortunate connection, I was able to visit this establishment.The first dish was a corn puree.Not only does it showcase the sweetness of the corn, but it also incorporates the husks and kernels to create a delightful texture, making it a fun experience.From the very beginning, it was clear that the quality of this restaurant is exceptional.I noticed this with every dish: the dashi (broth) was delicious.Yet, it was not overpowering.The balance that enhances the ingredients is remarkable.The seasoning was top-notch.Additionally, the staff's service was outstanding.I genuinely felt that I would love to return to this wonderful restaurant.
