Last night's dinner. After Golden Week, I experienced a miracle at Kokuryo.It was the usual place. I eagerly waited while looking at the menu, which only listed the ingredients. What arrived was:A tart of green peas with cherry salmon.Toast with sardines, fermented butter, anchovies, and chestnut paste.Carpaccio of first bonito with pearl onions, nuts, shallots, and maple syrup.Risotto with bamboo shoots and osso buco.Firefly squid with potato Trapani sauce.Fried white asparagus served with chicken liver.Vongole bianco with clams and Manila clams.Lamb cutlet with onions (forgot to take a photo).Shirasu pizza (it’s fried!).Half and half pizza with spring cabbage and new onions.Half and half pizza with broccoli and quattro formaggi.Sage ice cream served with salted lemon jam.Indeed, it was a miracle. It was so delicious that I overate and ended up having a sleepless night from being too full, but that’s a secret.The wine was also wonderful.
