Iida Shoten, located in Doih, Yugawara Town, Ashigarashimo District, Kanagawa Prefecture, is a ramen shop opened by owner Shota Iida in March 2010. It is now known for its reservation-only system, attracting many visitors from across the country.I ordered the wonton soy sauce chashu ramen. The moment the bowl arrived, I was captivated by the beautiful presentation, which conveyed the meticulous craftsmanship that went into each dish.The broth has a gentle soy sauce flavor that unfolds gracefully, layered with the rich umami of ingredients like chicken and pork. It has a delicate mouthfeel, yet there’s a satisfying depth that makes you want to savor every last drop.The homemade thin noodles are impressively smooth and have a supple texture, perfectly complementing the broth. The chashu is prepared to highlight the unique characteristics of each cut, allowing you to enjoy the different textures and flavors. The wontons strike a great balance between the smoothness of the skin and the presence of the filling, adding a rich accent to the entire bowl.From the selection of ingredients to the crafting of each bowl, the owner’s dedication to his craft is evident.
