Thanks to the support of loyal customers from his previous establishment, Ranmaru, reservations have become quite difficult to secure.Mr. Shimazu’s warm smile reflects his kind personality, and his sushi is mature beyond his years, perfectly paired with Japanese sake. The rice, seasoned with red vinegar, has a pleasant acidity and a rounded texture, finished al dente.
