I visited Sushi Arai, a representative sushi restaurant in Ginza, truly one of the best in Japan. The quality of each piece is exceptional, and the interaction with the chef makes the time spent at the counter a unique experience. What sets Sushi Arai apart is their unwavering commitment to serving only the finest ingredients, refusing to compromise on quality. From the quality of the ingredients, preparation, temperature, aroma, to the harmony of the sushi, there is no room for compromise.Starting with a gentle dashi made from three-leaf clover, it beautifully prepares the palate. The sashimi of flounder is elegantly presented, and the flow of red sea urchin, Narutomaki seaweed, and octopus showcases the refined character of Sushi Arai. The combination of monkfish liver and Nara pickles offers an outstanding balance of richness and aroma. The nitari whale, grilled sweet sea bream, and marinated blue crab were all memorable dishes. In terms of nigiri, the medium and fatty tuna from Oma and Tsugaru Strait were breathtaking. The quality of the fat, aroma, and harmony with the rice were superb, leaving a perfect lingering taste in the mouth. The progression of small horse mackerel, cuttlefish, sayori, bird shell, akagai, sweet shrimp, and horse mackerel reflects the artistry of Edomae sushi. The return of the fatty tuna and the deliciousness of the purple sea urchin brought a smile to my face.A comforting clam soup provided a moment of relaxation, and the anago, kanpyō roll, and tamago were flawless until the very end. With the finest ingredients, perfect nigiri, and the chef's warm personality and atmosphere, Sushi Arai is not just a place to eat sushi; it’s a destination to savor the ultimate sushi experience. No matter how many times I visit, it never fails to impress. This is a gem that Ginza can proudly boast about.
