Located just a short walk from Nagatacho Station, the innovative restaurant "CHIUnE" offers a unique dining experience.Chef Satoshi Furuta's cuisine is not about layering ingredients to create a vibrant presentation; instead, it focuses on the art of subtraction, maximizing the essence of each ingredient through minimalism. Each dish appears astonishingly simple, yet behind this simplicity lies meticulous ingredient selection and precise calculations. The classic "Shiitake Mushroom with Egg Yolk" showcases the robust aroma and umami of the shiitake, perfectly complemented by the rich egg yolk. Despite the few ingredients, the depth of flavor is overwhelmingly profound. On this day, I was particularly moved by the "Ayugai Soup."The unique aroma, bitterness, and umami of the ayu are beautifully expressed in the clear broth, with each sip deepening the lingering aftertaste. It’s a subtle deliciousness that quietly resonates in the heart rather than flaunting itself. The "Grilled Kamo Eggplant" was also exquisite. The carefully cooked kamo eggplant features a fragrant exterior and a melt-in-your-mouth texture inside, truly highlighting the charm of this ingredient. With a profound understanding of ingredients and a commitment to retaining only what is necessary, Chef Satoshi Furuta creates a collection of refined dishes that can only be produced by a genius. This is a one-of-a-kind restaurant where the quiet emotion lingers even after the meal.
