It’s been four months since my last visit to Ginza Ooishi, and the energy is still as vibrant as ever.I started with [Toyama Firefly Squid and Smoked Caviar Gougère].Next was [Chilled Sea Urchin and Caviar Consommé Jelly with Cauliflower Cream]. This time, the sea urchin was from Kitakyushu, Ginza Ooishi's hometown. It had a hint of red sea urchin flavor, which was delightful. Then came [Marinated White Asparagus from Bordeaux and Cherry Salmon with Fuki-no-Tō Dressing]. The thick, impressive white asparagus was beautifully presented, truly embodying French cuisine.Following that was [Black Truffle and Onsen Egg Flan with Mushroom Aroma]. I really enjoy this way of using black truffles.Next was [Hassun for May]. A large koi carp stood like a flag, and the plate was decorated with a child wearing a helmet, reminiscent of a children's lunch. I was thrilled to see the bamboo shoots from the Kumamoto region that I had enjoyed last year. - Spring Vegetable Terrine - Daisen Jidori Chicken and Burdock Galantine - Steamed Abalone with Liver Sauce Served with bread and butter. Then came [Foie Gras Monaka (Mango Version)]. This time, it was provided by Ginza Ooishi's son. You can see the fresh touch along with the essence of Ginza Ooishi.Next was [Salad Charlotte Style with Snow Crab and Green Asparagus] and [Foie Gras and Black Truffle Wrapped in Puff Pastry]. Given the season, I expected the puff pastry to feature eel, but instead, it was a different arrangement of the winter specialty I had last time: foie gras and black truffle wrapped in puff pastry. Then, [Watermelon Juice with Lime]. Last time it was citrus, but now it’s back to watermelon, which is perfect for refreshing the palate. For the main course, I had [Charcoal-Grilled Matsusaka Beef Sirloin with Green Asparagus and Pisanli Salad]. The main dish was a hearty serving of Matsusaka beef. I envy those who can eat a lot since the portion is flexible.Next was [Shrimp Tempura with Risotto], a spring-like risotto. And finally, for dessert: [Shizuoka Crown Melon Soup, Cherry Blossom Cheesecake, and Yame Tea Ice Cream, with Coffee].With the addition of his son in April, the atmosphere felt fresh and lively. It was a great meal!
