During a business trip to Niigata, I was taken to the renowned Kappou Shintaku in Murakami. They serve exquisite Japanese cuisine using rich local ingredients, including Murakami's famous salmon, sakura masu (cherry salmon), rock oysters, Murakami beef, seasonal mountain vegetables, rice, and local sake. Although access from western Japan is not particularly convenient, I would love to visit this restaurant again.
