I visited "Sushi Saitou" in Roppongi Ichome.On this day, Chef Hiroshi Ishikawa prepared the sushi for me, and each piece was crafted with great care, allowing me to enjoy a wonderful experience throughout my meal. The rhythm of the sushi preparation was pleasant, and while there was a special feeling unique to the counter seating, the atmosphere was calm, making it easy to relax and enjoy my meal.The highlight for me was the octopus. It was tender yet packed with flavor, and the taste expanded with each bite, making it incredibly delicious. The temperature and texture of the rice, along with its harmony with the toppings, were exquisite, and I could feel the high level of craftsmanship in every piece.The traditional Edomae techniques such as simmering, steaming, marinating, and grilling were evident throughout, making for a highly satisfying omakase experience until the very end. The restaurant was also clean and had a serene ambiance, making it a fitting sushi spot for a special occasion.I would love to visit again.
