The charm lies in enjoying a course that highlights the fresh seafood from Ehime, showcasing the seasonal ingredients of the day.The quality of the sushi is exceptional, with a wonderful harmony between the fish and the rice, reflecting the meticulous craftsmanship in each piece. Utilizing local ingredients unique to Ehime while incorporating Edo-style techniques, the meal remains engaging until the very end.The service and the restaurant's atmosphere are pleasant, making it a great choice for special occasions, business meetings, or dining while traveling.While Matsuyama has many delicious sushi spots, this one stood out for its high level of satisfaction. I definitely want to revisit when I return to Ehime.
