This French restaurant is said to be the best in Japan. About two months ago, I found an opening and finally decided to give it a try.It was indeed delicious. However, the photos didn’t turn out well in the large dining room, so I’ll do my best to recall the ingredients.**Amuse-bouche** *Sea Bream marinated in vinegar, scallions, biscuit* *Chilled soup with water eggplant, clams, and squid, served with granita, anise, and dill* **Appetizers** *Goat Cheese Bavarois with olive oil, lily bulb, and macadamia nuts* *Cream puff with mussels and white sauce* *Fried zucchini with beef prosciutto, semi-dried tomatoes, and green chili* *Winter truffle with couscous cooked in Comté cheese, scallops, and sea urchin* **Main Fish** *Kinmedai (Golden Eye Snapper) with bone broth sauce and grilled corn* **Main Meat** *Duck breast and thigh, slowly aged, with red wine sauce* **Desserts** *Dark cherry with cacao ice cream* *Macaron with mascarpone and passion fruit* *Nagano purple dried fruit in a pastry with mint sauce* *Merengue ice cream* The Goat Cheese Bavarois was indeed wonderful. However, the signature merengue ice cream was too simple for me to appreciate its greatness.For the winter truffle in the appetizers, I personally would have preferred summer truffles.The cooking of the duck was excellent, as expected from Quintessence. It was delicious. I would have preferred abalone instead of mussels in the cream puff. It seems they are going for high-quality ingredients without any gimmicks, which is commendable.I apologize for my complaints, as I am just an amateur, haha.I was impressed by how the numerous staff members served the dishes at perfect timing. On the other hand, there were so many staff in black uniforms that it was a bit overwhelming, almost unsettling. Additionally, the clientele included some women who were not necessarily refined.It was wonderful, but surprisingly, there weren’t many shocking moments. I’ve never heard of a three-star restaurant abroad having a two-turn system. The atmosphere at the end felt a bit rushed, which was unfortunate.It was a great meal!
