I was able to enjoy the "Takane Corn" soup again this year.This soup, made with just water and salt, has captivated me, and it's already my third year visiting "Ginza Ooishi" for the "Takane Corn" soup.Takane Corn is a rare variety of corn grown in Takane Town, Takayama City, Gifu Prefecture, at an elevation of 1,200 to 1,300 meters. It is hardly available in the market.Due to the significant temperature differences between day and night, its sugar content reaches an impressive 17 to 20 degrees, comparable to that of melons, resulting in a strong sweetness and juiciness.I hope I can enjoy it again next year!!Of course, all the other dishes were excellent as well.Thank you always!
