Located on the first floor of a building, this hidden gem is tucked away in a corner without any notable signage. When we arrived, we were the only guests.The first dish was Akou from Imabari Oshima. As expected, Mr. Fujimoto's top-quality, carefully prepared Akou was fresh and delicious—simply seasoned with olive oil and salt.Corn Soup The corn soup alone was already delicious, but pairing it with fresh mozzarella cheese flown in from abroad and a tangy sauce was a delightful first experience, adding a different layer of flavor.Homemade Bread The homemade bread with walnuts was rustic and paired perfectly with dishes like foie gras, making it hard to resist reaching for more.Foie Gras with Shine Muscat I usually dislike foie gras, but this one was surprisingly light. Enjoying it with honey and Shine Muscat grapes made it much more refreshing.Grilled Eel Simply grilled eel with a crispy texture, topped with sheep's cheese. The fat was well-rendered, allowing me to enjoy it easily. The potatoes paired with the cheese had a lovely roasted flavor.Pheasant Soup Pasta Once a delicacy for the nobility, this pheasant soup was made from pheasants raised for consumption in Kihoku, Ehime Prefecture. It had a mild flavor, and the soup was clear and gentle. The chewy pasta was stuffed with herb-seasoned pheasant meat.Summer Truffle Pasta Al dente pasta tossed simply with truffles—this is exactly what I love.For the main course, we had Kiwagyu from Mie Prefecture. The beef top sirloin resembled venison and was among the best I’ve ever had! It was incredibly tender, and the flavor intensified with each bite.The simplicity of the seasoning, relying on the quality of the ingredients and the chef's perfect cooking technique, made it exceptionally delicious. I was truly impressed.During the meal, the chef played his carefully selected records. This was a far cry from the typical cafes that play records. In the pleasant atmosphere with soothing music, I wanted to linger and enjoy the delicious food and drinks for as long as possible.The drink selection was rich in wines. While the soft drink options seemed limited, each one felt thoughtfully curated.I wish there was such a wonderful place near my home!I will definitely stop by whenever I visit Matsuyama!
