Every time I visit, the game dishes are delicious and continue to evolve. Of course, the sweet and fluffy ayu (sweetfish) is a highlight of the season, with the bitterness from the belly adding to the experience. This time, they even had pheasant!!! The fat from the pheasant is incredibly rich and absolutely delicious! The eel, whether grilled white or glazed with sauce, is also fantastic! It’s simply the best. The final dish, a pheasant rice pilaf, was astonishingly delicious—something I’ve never tasted before. Even the regular menu is outstanding, but the fact that they keep evolving is what makes this place truly remarkable. There’s definitely a reason to travel here by Shinkansen!
