Following the limited dish, "Chilled Noodles with Blue Soybean Soy Milk, Wasabi, and Sudachi from Yugawara Junian," I enjoyed the popular "Tsukemen (Salt Flavor)."This dish features two types of noodles, "white" and "black," allowing you to experience two different textures in one plate. The "white noodles" are smooth and supple, highlighting the refreshing sweetness of the wheat, while the "black noodles" boast a robust flavor with the nuttiness of bran and a rich depth. I started by savoring them plain, amazed by the distinct flavors. Then, with the addition of condiments like salt, umeboshi (pickled plum), and wasabi, I found myself eagerly reaching for more noodles before I even got to the dipping sauce.The pairing with the mild yet sharp salt broth was exceptional. It was simply the best, and I slurped it up with great enthusiasm!The highlight was the finishing touch with the soup dilution. When I requested "Niboshi" (dried sardines), it was served with warm broth and a little extra "noodle" added in. I was deeply moved by the thoughtful hospitality, ensuring that I could enjoy every last bite.Not only was the flavor outstanding, but this unique establishment also reaffirmed its status as a one-of-a-kind gem with its exceptional hospitality.
