I chose the wonton chashu shoyu ramen, salt-flavored tsukemen, and meat rice.The atmosphere inside the restaurant is incredibly clean, and the sight of Mr. Iida and his apprentices, all sporting buzz cuts like high school baseball players, shows their dedication.The shoyu ramen hit me with its impact from the very first bite.It was a wonderful bowl with a complex and deep flavor, where the pleasant aftertaste of the soy sauce beckoned me to take another bite, again and again.The chashu had a luxurious melt-in-your-mouth sensation, reminiscent of high-end sukiyaki.The tsukemen felt like a course meal, allowing me to enjoy various flavor transformations, much like a traditional Japanese kaiseki.
