On this day, it was Golden Week, specifically Constitution Memorial Day Sunday. I took the Tokaido Line to Yugawara Station. Given it was Golden Week, I was already feeling overwhelmed by the crowded Green Car and the low manners of some passengers. After about a 10-minute walk from Yugawara Station, I arrived at Iida Shoten! This restaurant is ranked number one in Japan on Tabelog. Reservations must be made in advance through the OMAKASE website.Although I wanted to go, it felt like a hassle to actually make the trip, haha. This has been a long-standing goal of mine. With no particular plans for this year's Golden Week, I suddenly thought, "Why not give it a try?" and prepared for my reservation a week in advance. I managed to secure a reservation, marking my first visit.I arrived at the restaurant 20 minutes before my reservation time (I took an earlier train to avoid being late). Who was the first person to discover this place? The ramen enthusiasts are truly amazing. As someone who just follows in their footsteps, I have great respect for them.The staff at the souvenir shop directed me to the ticket machine. When I finally looked at the menu, I quickly gave up on trying to decide and decided to order two dishes since I was there. I ordered the Shoyu Chashu Ramen for JPY 2,650 and the Shio Ramen with Wontons for JPY 2,450. I went over JPY 5,000!!! (ΦΘΦ;)At the exact time of my reservation, they began confirming my reservation and meal tickets. At the same time, those ordering multiple dishes decided which one to serve first. I requested the "Shio" first, followed by the "Shoyu." Ultimately, I entered the restaurant about 10 minutes after my reservation time.Once seated, the owner, Mr. Iida, greeted each customer warmly. I was lucky to be seated right in the middle, allowing me to closely observe Mr. Iida's work. He prepares three to four bowls at a time, and you can feel the tension among the staff as they work together. Their movements are incredibly graceful.After about 12 minutes, my Shio Ramen with Wontons arrived! The toppings included chashu made from Kirishima Kogen Pure Black Pork, one wonton each of chicken (brand forgotten) and pork (Kinka Pork), white leeks, bamboo shoots, and snap peas for color.First, I tried the broth. The initial taste was incredibly gentle, yet the umami flavor gradually expanded. This is restaurant-quality broth. You can also subtly taste the seafood flavor, which is quite pleasant. I could drink this broth forever.Now for the noodles. Unfortunately, they weren't to my liking. They were soft and fluffy... what a shame. But that's just a matter of personal preference. The chashu was absolutely delicious ( ˃̶͈̀ロ˂̶͈́ )੭ꠥ⁾⁾. The bamboo shoots must have been high quality as well. It was all very tasty. I was tempted to finish the broth, but I had to hold back since the Shoyu was coming next.About three minutes after finishing, the Shoyu Chashu Ramen arrived! The chashu was made from Kirishima Kogen Pure Black Pork and TOKYO-X. I started with the broth. Compared to the Shio Ramen, this broth was hot, hot, hot! Maybe because it had a lot of chicken oil? The flavor had a slight bitterness and acidity from the soy sauce, which left a somewhat ambiguous impression... The chashu was outstanding! Other toppings included seaweed, leeks, and menma. They use carefully selected, excellent ingredients.After finishing my meal, I stepped outside the restaurant, and it was exactly 40 minutes after my reservation time. It was a great experience at Japan's number one ramen shop! It was a great meal!
