Reflecting on it, this is the only traditional French restaurant I regularly visit that isn't considered innovative. I returned to Quintessence today, and once again, the menu was wonderfully varied and well-balanced. As always, the cooking of the fish and lamb was absolutely perfect. This place is truly indispensable. Everyone I brought along was delighted as well. It was a great meal!
