I was finally able to visit Kyodai Zushi, a place I had wanted to go to for a long time. From start to finish, it was a restaurant that truly showcased the flavors of Niigata. About 90% of the ingredients used are sourced from Niigata, including local rice and seasonings. They don’t just sell the freshness of Niigata’s bounty; they also take the time to age certain items, adding depth to the flavors. The atmosphere is impressive, with a sense of elegance enhanced by the cheerful shouts from the staff. The head chef personally engages with each customer, calling them by their last names with a smile. There were many unique offerings, such as ara (a type of fish), chidai (blood sea bream), and nanban shrimp, which made me feel the essence of Niigata. Not only seafood, but also grilled sweetfish from Uonuma in the mountains made an appearance. The selection from Sado Island was abundant as well. I’m glad to have found a place I want to return to.
