Located in Murakami City, Niigata Prefecture, there is a Japanese restaurant that can be described as a local gastronomy spot, using over 90% of its ingredients sourced from the area. Murakami offers a wide variety of ingredients, including seafood, wild vegetables, and game meat. What’s impressive is that even the seasonings are from Murakami. The restaurant skillfully modernizes these ingredients, allowing the gentle flavors to shine through. The fish is rich and smooth, and dishes like the chawanmushi (savory egg custard) with tsurumurasaki and the moringa hot pot truly convey the essence of the ingredients. The Yamagai brothers are in charge of the cooking. I’ve heard from regulars that the menu changes frequently, making it worth visiting often. I look forward to my next visit!
