In recent times, flashy meat kaiseki restaurants have been popping up, prioritizing Instagram-worthy presentations with extravagant toppings like sea urchin, truffles, caviar, and even gold leaf. These establishments often mask the mediocrity of their meat with symbols of luxury, employing marketing strategies that inflate customer spending. However, Nikuya Tanaka in Ginza offers a stark contrast with its overwhelming aesthetic of "subtractivism."This time, I visited the lunch counter in the absence of the boss, Satoru Tanaka. The grill was handled by Hiroshi Katsuhara, a young protégé who will be in charge of the upcoming New York branch opening this fall. Here, I experienced a panorama of 11 dishes that boldly showcased the potential of meat with world-class hospitality.1. Tajima Beef and Akashi Sea Bream Sushi with KarasumiThe first dish arrived on a vibrant yellow dragon plate. It featured kombu-cured Tajima beef and Akashi sea bream, elegantly rolled in nori and generously topped with karasumi powder. One bite reveals a perfect explosion of umami from the inosinate in the meat, the inosinate in the sea bream, and the glutamate from the kombu. The refreshing touch of shiso and cucumber keeps the dish lively—a perfect prologue.2. Early Summer HassunThis colorful platter, adorned with fresh green maple leaves, includes meat sushi and a lavish serving of caviar, alongside burdock root wrapped in meat (Yahata-style). A standout is the jelly served in a sudachi bowl, containing shrimp, junsai, and summer vegetables, complemented by fava beans and figs. The rich fat of the meat is beautifully balanced by the refreshing texture of the junsai, showcasing a wonderful respect for traditional Japanese culinary techniques.3. Grilled and Seared Flap MeatSuddenly, flames from straw ignite behind the counter, adding an element of entertainment. The cut is the rare "flap meat," located next to the tenderloin. This cut combines the juiciness of belly meat with the tenderness of the tenderloin. The intense heat from the straw sears the surface, imparting a powerful aroma that eliminates any greasiness. Enjoy the unique flavor on its own first, as the rich umami and subtle saltiness create a complete taste. For the second bite, enjoy it with a classic soy-based sauce and shredded white negi, served in a cool crystal glass dish—perfect for early summer.4. Hair Crab ChawanmushiOpening the black lacquered bowl adorned with gold makie reveals a pure white chawanmushi floating in a sea of dashi. Remarkably, it is formed with over 95% hair crab meat, using minimal binders. As you take a bite, the delicate fibers of the crab, in season during early summer, dissolve beautifully. The sweetness of the crab merges with the dashi in your mouth, serving as a perfect palate cleanser after the smoky grilled dish.5. Fried TenderloinIn stark contrast to the gentle chawanmushi, a bold street-style dish slides in. This "makai" dish, rooted in the boss's childhood experiences at his family’s butcher shop, represents the essence of Tanaka's philosophy. The exquisite tenderloin is quickly marinated in soy sauce and ginger, then fried with an ultra-thin batter. The moment you bite into it, the hot juices trapped within the delicate shell explode. This is a straightforward deliciousness that comes from the butcher's DNA, not just dressed up with luxury ingredients.6. Sirloin Sukiyaki with New Onions and Fresh SanshoA generous serving of beautifully marbled sirloin is prepared as sukiyaki. Interestingly, it is served atop "slow-cooked new onions," which absorb the sweet flavors of the sauce and fat, creating a harmonious blend with the meat. Freshly pounded sansho, available only at this time, adds a pop that tightens the rich fat of the sirloin. This is a meticulously calculated early summer sukiyaki, beautifully presented in a blue-dyed porcelain dish.7. Yuzu SorbetA palate cleanser before the main course, served in a tall cocktail glass. The surface is crispy, while the center boasts a seductive rosy hue. With a texture so delicate it requires no chewing, the refined richness of the lean meat bursts forth with each bite. The clear sweetness of the fat, unburdened by heaviness, is a testament to the skill of the artisan and the quality of the whole animal purchase. Absolutely delicious.9. Corn (Dolce Dream) Clay Pot RiceFor the final rice dish, Katsuhara vigorously mixes the clay pot. The rice is made from the brand variety "Dolce Dream," known for its sweetness exceeding that of melons (18-20 degrees). The fruity sweetness bursts forth, complemented by the toasty aroma of the scorched rice. When combined with the rich saltiness of the "special beef simmered dish," it creates a devilishly addictive "sweet and salty loop." The red miso soup and crispy pickles complete the perfect ensemble.10. Crown Melon with Junmai Daiginjo SakeThe first dessert features a perfectly ripened crown melon, luxuriously drizzled with Junmai Daiginjo sake, the king of sake. The fruity aroma of the sake harmonizes beautifully with the refined scent of the fully ripe melon, enhancing the melon’s contours with the rich sweetness of the rice and a hint of alcohol. The playful butterfly-patterned plate adds a charming touch.11. Homemade Matcha Warabi MochiFinally, freshly made warabi mochi, kneaded on-site and set in ice water. Made from 100% rare warabi powder, it has a shelf life of only a few minutes. Its high purity gives it a soft, melt-in-your-mouth texture. The rich black syrup and the vivid green bitterness of the matcha elegantly conclude the meal, perfectly wrapping up the lingering flavors of the meat.◾️ Overall Impression: This is the essence.Nikuya Tanaka stands apart from meat kaiseki restaurants that merely pile on symbols of luxury like caviar and truffles without substance. Moreover, the fact that Katsuhara flawlessly executed such high quality and "pleasant, non-pressuring service" in the absence of the boss showcases the remarkable operation of this restaurant. Witnessing his "final adjustments" before the opening of the New York branch this fall was an incredibly premium experience for a food lover. Here, the luxury of eating not just symbols, but the essence of food, truly exists.
