This restaurant is located a 7-minute walk from Tenjinbashisuji Rokuchome Station. Chef Nakamura trained for 3 years at Uemura and 5 years at Oimatsu Kitagawa before opening this establishment in 2019. The name "Higashi Chaya" is derived from Kanazawa's historic tea house district, which was once bustling with activity. Being from Ishikawa Prefecture, the restaurant subtly incorporates elements of Kanazawa's culture throughout. Nearly 90% of the seasonal fish is delivered directly from Kanazawa, and local vegetables are also used, showcasing a strong emphasis on Kanazawa's culinary heritage. Since this was a business dinner, I didn't take any photos or notes. Each dish is carefully prepared to highlight the natural flavors of the ingredients, making them a perfect match for Japanese sake. The portions were more generous than I expected, and everything was delicious and satisfying. I particularly enjoyed the sea urchin. Reservations are relatively easy to make, and the ambiance is pleasant, making it a place I would love to visit again. I hope to return when the opportunity arises.
