This was my first visit to the restaurant. A total of 15 dishes were served, including desserts, and each dish was a complex creation with multiple layers. The flavors were incredibly delicious, making for a surprising and moving three-hour experience. The intricacies hidden beneath the surface are hard to capture in photos. The restaurant primarily uses locally sourced ingredients from the Ishikawa Prefecture, and the combinations of ingredients are quite unique. The menu features illustrations of the ingredients, but the staff provided detailed explanations, which helped in understanding the dishes. Below are my notes, but please forgive any inaccuracies as they are based on my somewhat vague memory.- Kaga vegetables: Red-skinned sweet chestnut pumpkin with two types of pork rillettes and summer truffle.- Peanuts: Two types with mushrooms and eggs, and with aosa seaweed and sea grapes.◎ Sweetfish: The bitterness of the sweetfish intestines combined with a paste and herbs was exquisite.- Hozuki (Chinese lantern plant): Two types, one hollowed out and finished with jelly, paired with foie gras.◎ Flower okra: Flower okra filled with crab paste, soaked in broth and cheese—particularly memorable.- Teigai (a type of clam): The crunchy teigai made a sound as I chewed. Served with kale fritters and a sauce made from arugula?◎ White shrimp: Slices of white shrimp at the bottom, accented with onion jelly and caviar, along with lemon.- Sardines: Two types, one grilled sardine wrapped in perilla and a paste.- Maitake mushrooms: Charcoal-grilled shiitake mushrooms with a rich sauce that included cuts of Noto beef.- Fig: Fried figs served with blue cheese and topped with prosciutto.- Swordfish: Fluffy grilled swordfish with tsurumurasaki (a type of vegetable).◎ Noto beef: Low-temperature cooked Noto beef with a smoky aroma from charcoal—delicious without needing further explanation.- Shiso: A five-layered sorbet that is not immediately apparent in appearance.- Honey: Rich and aromatic honey cut just before serving, accompanied by light cream cheese and rich smoked cheese.- Sweets: Three types of tea sweets.
