This is a beloved restaurant that I visit several times a year.Nestled in the mountains of Mizunami, dining here is a unique experience as we enjoy our meals around a traditional irori (sunken hearth). In spring, we savor wild vegetables; in summer, fresh ayu (sweetfish); in autumn, mushrooms; and in winter, dishes featuring boar, venison, and bear—each season brings the best of the local bounty.During this visit, I had young ayu, and I was also able to enjoy larger-sized fish. The quality of the ingredients is exceptional, but what impresses me the most is the cooking technique. The dishes, perfectly grilled over the irori, bring out the natural flavors of the ingredients, showcasing the craftsmanship through their simplicity.Since the menu changes with the seasons, there are always new discoveries to be made with each visit. I look forward to each trip, wondering what delightful dishes I will encounter this time.It’s easy to understand why food enthusiasts from all over the country come here; it truly is a representative restaurant of Japanese regional cuisine. Reservations can be challenging, but the experience is well worth it.
