I visited this restaurant with colleagues from work.After taking the private elevator down, we chatted with the chef in the waiting room. When it was time, we moved to the dining area to start our meal. We began simultaneously with appetizers followed by sushi.The main seating is at the counter, and there’s plenty of space between diners, allowing us to enjoy our meal at a leisurely pace.The appetizers focus on high-quality ingredients, and while there aren’t many options, each one is absolutely delicious! Being originally from Sapporo, the uni and shellfish particularly stood out to me. The sushi rice is seasoned with white vinegar, creating an exceptional flavor. It pairs perfectly with all the toppings, making it truly delightful! I couldn’t quite pinpoint what made it so special, but everything complemented each other beautifully.You can see the attention to detail in temperature control, the rice, and the size of the toppings, making it a rare culinary experience! The sushi is incredibly delicious and reflects the chef's passion, but the only downside is that it’s hard to get a reservation. If you have the chance, I highly recommend visiting this place!
