This is a highly sought-after restaurant where reservations are quite difficult to secure. Miraculously, I had the chance to visit. To my surprise, a 21-year-old young chef was preparing the sushi. I was amazed that this course costs only JPY 8,800, offering incredible value for money. Although it’s said to be a training restaurant for young chefs, the quality of the environment and the ingredients were impeccable. Having dined at many places, I noticed some minor shortcomings, but it was clear that the chef was putting in a tremendous effort. I hope he becomes a wonderful sushi master in the future, and I want to support him with warm encouragement. While making a reservation is challenging, I would love to visit again.
