If you love eel, you must visit "Kabuto" at least once.This time, I indulged in a comparison between wild and farmed eel.It turned out to be more interesting than I expected.I preferred the white grilled eel from the wild catch.Its robust texture and aroma came through directly, and the umami expanded with every bite.On the other hand, I liked the grilled eel from the farmed variety better.The richness of the fat and the harmony with the sauce were exceptional, making it incredibly satisfying when paired with rice.It’s not as simple as saying wild is always better; preferences can change depending on the cooking method.And "Kabuto" offers more than just eel.The skewers are unbelievably delicious.Each skewer has a different texture and flavor, allowing you to fully enjoy the eel as an ingredient.I’ve eaten eel at various places, but when it comes to eel, there might not be a restaurant that surpasses this one.White grilled, grilled, skewers.It’s not just one thing that stands out; there are no flaws from start to finish.So far, this is the pinnacle of eel for me.I definitely want to come back for more.
