It retains a slight firmness, allowing you to enjoy the texture. You can feel a hint of saltiness in the rice, and the temperature difference with the toppings is just right.The lean tuna is served with salt, making it a unique experience. The fatty tuna with pickled radish was particularly good for me! ✨ The sea urchin had no bitterness, so it seems they used a non-bitter variety. The bones of the gizzard shad dissolve due to the vinegar, so they intentionally present the sushi upside down. While the vinegar isn’t too strong, it might overshadow the quality of the topping a bit.
